pickled red onions and vinaigrette a dish that reflects the Icelandic respect for clean flavors and the purity of local
ingredients.Greenland served golden-fried halibut skewers with lime and tartar sauce honoring its deep connection to the sea and its
traditions of fishing, preserving and living in harmony with nature.The Faroe Islands presented pan-fried salmon medallions with hollandaise
— rich, silky and rooted in a cuisine shaped by ocean winds, strong tides and age-old methods of fermentation and drying.
